Savory Beef Stew

 1 lb beef cut in small cubes
 1 tbsp Oil
 ¾ cup onion chopped
 1 cup tomatoes chopped
 1 generous tsp quick cooking tapioca
 1 can condensed beef broth
 1 clove garlic minced
 1 tbsp parsley flakes
 1 bay leaf
 salt and pepper to taste
 4 medium carrots chopped
 2 parsnips chopped
 2 medium potatoes chopped
 ¼ cup celery chopped

Brown beef in a large skillet. Add onion tomatoes tapioca beef broth garlic parsley salt pepper and bay leaf. Stir and bring to a boil.

Turn into dutch oven and cover. Bake in 350 oven for 1 1/2 Hrs.

Add carrots parsnips potatoes and celery. Stir and return to oven for 1 Hr.
