Zucchini Pineapple Bread

 3 eggs
 2 cups sugar
 1 cup oil
 2 tsp vanilla
 3 cups Flour
 2 tsp baking soda
 ½ tsp baking pwdr
 1 tsp salt
 1 ½ tsp cinnamon
 1 tsp nutmeg
 1 ½ cups grated zucchini (unpeeled is ok)
 1 - 8 oz can crushed pineapple
 1 - 4 oz package instant vanilla pudding (unprepared)

Preheat oven to 350

In large bowl beat eggs, sugar, oil and vanilla until foamy.

In another bowl sift flour, baking soda, salt, baking powder, cinnamon and nutmeg. Combine w/ egg mixture.

Stir in zucchini and pineapple and pudding (unprepared).

Pour into 2 greased and floured loaf pans.

Bake 1 Hr or until toothpick inserted comes out clean.
