For the Cake
2 cups flour
2 cups sugar
1 ½ tsp baking powder
3 cups shredded carrot
1 ½ cups chopped nuts
1 ½ tsp baking soda
2 tsp cinnamon
1 tsp salt
4 eggs
1 ½ cups veg oil
Frosting
1 box confectioners sugar - sifted
8 oz softened cream cheese
1 stick butter - melted
2 tsp vanilla
For the Cake
Combine flour salt baking powder baking soda cinnamon in a bowl and set aside
In a mixer combine sugar eggs and veg oil. Cream until smooth
Add the dry ingredients into the mixer and mix until smooth
Add carrots and nuts to mixer and mix until will combined
Spray a spring form pan with cooking spray
Pour batter into the greased pan and bake for 1 Hour at 350°
For the Frosting
Add butter cream cheese and vanilla in a mixer and mix until smooth.
With mixer on low speed gradually add the powdered sugar and mix until very smooth.
When cake pan is completely cooled remove cake from pan.
Spread frosting over the cake.
