Extraordinary Homemade Pizza Dough

1 ¼ cups warm water (110 to 115)
2 tsp sugar, divided
1 pkg (1/4 oz) active dry yeast
3 ½ cups all purpose or 00 flour
1 tsp sea salt
1 tsp each dried basil and oregano
cup vegetable or olive oil
Make the Dough

In a small bowl, mix water and 1 tsp sugar. Add yeast; whisk until dissolved. Let stand until bubbles form on surface.

In a large bowl, whisk 3 cups flour, salt, remaining 1 tsp sugar and dried herbs.

Make a well in center; add the yeast mixture and oil. Stir until smooth. Add enough remaining flour to form a soft dough.

Turn onto a floured surface; kneed, adding flour to surface as needed until dough is no longer sticky and is smooth and elastic, 6 to 8 minutes.

Place in a large greased bowl; turn once to grease the top. cover and let rise in a warm place for 30 Minutes. Transfer bowl to refrigerator and chill overnight.

Allow dough to come to room temperature , about 30 Minutes before rolling.

Make a Pizza

Divide dough in half. With greased fingers, pat onto 2 ungreased 12" pizza pans. Prick dough thoroughly with a fork. Bake at 400 until lightly browned, 10 Minutes to 12 mins.

Using you favorite pizza toppings build your pizza.

Bake at 400 until golden brown about 10 Minutes to 15 minutes
or
Wrap pizzas and freeze for up to 2 months.
To bake frozen pizza:
Unwrap and place on a pizza pan; thaw in refrigerator.
Bake at 400 for 18 Minutes to 22 mins.

Notes:

00 Flour - imported from Italy
King Arthur Unbleached is similar to 00 flour.

Recipe pizza suggestion:
In a skillet cook 1 1/2 lbs bulk Italian sausage, 1 sliced onion, 1 sliced green pepper and 1 cup sliced mushrooms over medium heat until sausage is no longer pink; drain.
Spread 1/2 cup pizza sauce over a crust. Top with sausage mixture; sprinkle with mozzarella cheese.
Bake at 400 for 12 Minutes to 15 mins.
