Chinese Beef and Broccoli

For the Dish
lb lean shaved steak
1 tbsp soy sauce
1 tbsp sherry
2 tbsp oil for high-heat frying
½ yellow onion; halved then sliced
1 clove garlic; minced
1 tbsp grated fresh ginger
4 cups fresh uncooked broccoli florets in bite-sized pieces
1 cup bean sprouts
For the Sauce:
¼ cup soy sauce
¼ cup water
¼ cup brown sugar
1 tbsp sherry
1 tbsp toasted sesame oil
2 tbsp Oyster Sauce
¼ tsp freshly ground black pepper
1 ½ tsp cornstarch

Toss the beef strips with the soy sauce and sherry. Set aside until ready to use.
Combine the sauce ingredients until the cornstarch is dissolved. Set aside until ready to use.

Wok directions:
Heat the oil over high heat in a wok. Once very hot, add the beef and fry until lightly browned, about 2 Mins.

Add a little more oil if necessary. Add the broccoli and cook for another minute or until crisp-tender. Stir in the bean sprouts. Stir in the sauce and simmer for another minute.

Add the onions, garlic and ginger and cook for 1 Mins.

No Wok directions:
In a very hot fry pan, cook the broccoli and onion in a little oil. Once it starts to cook, add a little water and cover immediately... let it steam. Do this a couple of times to get the broccoli going.
Uncover; continue cooking the broccoli and onion until the broccoli softens some; then add the garlic. Stir in the bean sprouts. Cook uncovered for about 1 minute.

Stir well; clear the center of the pan and add 1 tbs oil and the shaved steak. Let it sit for a minute then stir with a fork to move the meat to the bottom of the pan. Cook until the steak browns.

Stir all together and add the sauce; let it sit for a minute until it bubbles and starts to thicken. Then stir well to coat the entire dish.

Either Method:
Serve immediately with steamed rice.
