Our favorite salmon dish!

Heat a small sauce pan over medium/low heat. Add the oil(s) and gently saute the garlic. (Don't over cook the garlic as it will turn bitter.) Before the garlic browns, add the Hoisin sauce and sugar; stir well. Cook over medium heat until it bubbles.
Remove from heat and allow to cool.
Coat the salmon with the barbecue sauce on both sides just before grilling. Cook over very hot coals for about 10 minutes turning once at five minutes. A wire rack will help prevent the fish from sticking or falling through the grill.
Line a sheet pan with foil.
Place the salmon on the foil and coat the top side with the sauce.
Broil for about 5 minutes or until the sauce is bubbly and turning brown.
Remove the pan from the broiler. Using a wide spatula, turn the salmon over.
Coat the other side with sauce.
Broil until the sauce is bubbly and turning brown.
Change the oven to Bake at 350
Bake until the salmon flakes with a fork.
