2 tbsp red wine vinegar
¼ cup lightly packed fresh basil leaves or 1 tbs dried basil
3 tbsp fresh parsley
1 clove garlic, minced
¼ tsp salt
¼ tsp sugar
¼ cup grated Parmesan cheese
⅓ cup olive or salad oil
In a blender or food processor combine ingredients and process until smooth and well combined.
Let stand at room temperature for 1 to 2 hours to blend flavors.
Stir well with a whisk before spooning over sliced fresh tomatoes.
