My Mom's Creamy Cheesy Potato Casserole.

4 med potatoes
1 cup sour cream
1 ¼ cups grated sharp cheese
4 scallions sliced
1 tsp salt
⅛ tsp pepper
⅛ tsp paprika
Peel and cut potatoes in 3 pieces. Boil potatoes until tender then drain and cool. When cool cut into small chunks.
In a bowl mix sour cream 2/3 cup of cheese scallions salt and pepper. When mixed add potatoes and mix well.
Put the mixture into a baking dish and sprinkle with remaining cheese and paprika. Bake uncovered 35 to 40 minutes at 325-350 degrees.
Notes:
For 12 people use 10 potatoes.
