Pork Napoli

1 tbsp olive oil
1 (3/4 pound) pork tenderloin
2 Roma tomatoes, seeded and chopped
¼ cup chopped green olives
¼ cup sherry
2 tsp chopped fresh rosemary
2 cloves garlic, minced
¼ tsp pepper
3 tbsp heavy cream

Preheat oven to 400.

Heat the oil in a cast iron skillet over medium-high heat. Brown pork on all sides in the skillet.

Mix the tomatoes, olives, wine, rosemary, and garlic in a bowl. Pour over the pork. Season with pepper to taste.

Place skillet with pork in the preheated oven and bake about 20 Minutes. Check its internal temperature. Your looking for about 145, return to oven if need be.

Remove pork to a warm plate and cover tightly with aluminum foil.
Place skillet over medium heat and add the cream.
Stirring often, bring to a boil. Reduce heat to low and continue cooking 5 minutes until thickened. Slice pork and drizzle with the cream sauce to serve.

Notes:

Grate some fresh parm cheese into the sauce at the end of cooking.
Serve over egg noodles with sauce over all.
