Easy Rice Pilaf!

1 cup white rice
1 tsp extra virgin olive oil (or chicken fat)
¼ cup chopped onion - green onion (scallions
¼ cup chopped celery
2 cups Chicken stock
1 tsp salt or seasoned salt
⅛ tsp ground pepper
Dash cayenne
¼ cup chopped fresh parsley

Heat stock in microwave.

In a medium saute pan, brown the rice in the oil.
Then add the onions and celery and cook a few minutes longer, until the onions begin to soften.

Add salt, pepper and cayenne if desired. Stir.

Add the stock and mix well. Bring to a boil, reduce heat, cover and simmer about 20 Mins.

After the time, take a peak at rice to see that all the broth has been absorbed. If not, cook a little longer and look again.
Once all the liquid has been absorbed, remove the pan from the heat and let sit for 10 Mins, covered.

Fluff with fork, stir in parsley: Add your favorite add ins, then fluff with a fork and serve.

We like to add raisins and lightly toasted almonds.
